The \u003c\/span\u003e\u003cspan\u003eblack malt\u003c\/span\u003e\u003cspan\u003e brings lots of \u003c\/span\u003e\u003cspan\u003eburnt toast\u003c\/span\u003e\u003cspan\u003e, overly \u003c\/span\u003e\u003cspan\u003eroasted coffee\u003c\/span\u003e\u003cspan\u003e flavours, and an \u003c\/span\u003e\u003cspan\u003eassertive acidity\u003c\/span\u003e\u003cspan\u003e. We have started using a little \u003c\/span\u003e\u003cspan\u003echocolate malt\u003c\/span\u003e\u003cspan\u003e to try and reduce those acrid, burnt flavours, and some \u003c\/span\u003e\u003cspan\u003ecrystal malt\u003c\/span\u003e\u003cspan\u003e to bring sweetness to balance the acidity. We made these changes because, although we enjoyed the\u003c\/span\u003e\u003cspan\u003e beer\u003c\/span\u003e\u003cspan\u003e reproduced from the \u003c\/span\u003e\u003cspan\u003eoriginal recipe\u003c\/span\u003e\u003cspan\u003e, we enjoy our current interpretation more.  \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThe resulting beer is\u003c\/span\u003e\u003cspan\u003e dark\u003c\/span\u003e\u003cspan\u003e, \u003c\/span\u003e\u003cspan\u003edark black\u003c\/span\u003e\u003cspan\u003e.
